Tipperary Homegrown Barley – Sake Finish is a beautifully balanced whiskey with a unique cask influence. On the nose, rich maple-cured honey sweetness is complemented by dried apricots and freshly chopped wood. The palate delivers a bold kick of spicy chilli and black pepper, followed by layers of raisins, raspberries, strawberries, and hints of honeyed banana. A distinctive umami note lingers on the finish, adding depth and complexity. This whiskey was first matured for 6.5 years in a first-fill ex-Rioja cask from Bodega Faustino, Spain, before being finished for 5 months in a 50-litre sake-seasoned octave cask, creating a truly one-of-a-kind expression.
