About Our Cream Sherry Casks

These small 120L casks have been cut down from larger Butts that were used to mature cream sherry. They have a lot more activity within the wood than standard casks, making them suitable for accelerated ageing and early bottling.

Cream Sherry casks are now rarely seen in the whiskey world, although they used to be a lot more common. The style is usually made by sweetening a base Sherry such as Oloroso with sweeter PX or Moscatel Sherry. However some styles such as Pale Cream are made 100% from the Palamino Fino grape.

Each cask has been filled recently with Triple Distilled Single Pot Still spirit from the Great Northern Distillery.

Great Northern Distillery source Irish barley which is malted in Ireland. The grains are wet milled, breaking open the grains to form a grist. Mashing is when this grist is mixed with hot water in the lauter tun which then turns the starch into a sugary liquid called wort. The wort is then converted into a beer-like liquid once yeast is added. The yeast converts the sugar into alcohol and it's now called wash. The wash is then double distilled in Great Northern’s giant copper pot stills. The spirit is put into cask at 63% abv and on this occasion will be casked in a first fill American Bourbon barrel.

How many years does triple distilled whiskey take?

Triple distillation refers to the number of times a spirit passes through a still, not the number of years of maturation. There is no mandatory maturation period linked to triple distillation. Irish whiskey, which commonly uses triple distillation, must be aged for a minimum of three years in wooden casks by law, the same minimum as Scotch. The additional distillation pass produces a lighter, more refined new make spirit that may require less time in wood to achieve balance, though age statements are determined independently.

How to know if whiskey is triple distilled?

Check the producer's label, technical notes, or official website: most distilleries that triple distil specifically flag this as a production credential. Irish distilleries including Bushmills and Jameson triple distil as standard practice and will state this. The flavour profile of triple distilled whiskey tends toward lighter, more refined, and less raw character than double distilled expressions at the same age, though this is a stylistic tendency rather than a reliable diagnostic. Is triple distilled whiskey better?

Not categorically. Triple distillation produces a lighter, more refined new make spirit by removing more congeners with each successive distillation pass. This creates a softer, cleaner base spirit. Whether this is better depends on what you value: Scotch single malts, which are double distilled, can achieve significantly more complexity and character through their congener content than triple distilled Irish expressions. The best whiskey is the one whose character you prefer, regardless of the number of distillation passes.
