This whisky begins life at the Cooley Distillery, spending over a decade in bourbon oak to build a solid, rounded grain backbone before spending a further four years in a refill Oloroso sherry butt that previously conditioned exceptional sherries.
On the nose, expect inviting layers of sweet vanilla, toasted oak, and rich dried fruits, underpinned by gentle spice - a testament to both the long maturation and deep sherry influence. The palate is full-bodied and concentrated at cask strength, with sumptuous notes of raisin, fig, toffee and warm baking spice, balancing the elegant cereal sweetness typical of grain whiskey with complex sherry-driven richness.
The finish is long, indulgent and warming - a slow fade of dried fruit, subtle oak tannins, and a hint of peppery warmth that lingers well beyond the last sip.
