Making Techniques | Grapes pressed traditionally without rotations, 30% fermented in stainless steel tanks, forming the fresh and mineral component, while the other part fermented in French oak vats to provide complexity, volume and deepness to the final blend. During its time in the vats, a periodical movement of fine sediments was made using canes. A touch of malolactic fermentation adds another ingredient that contributes roundness, balance and deepness in the mouth. |

2010 Vintage-Robert Parker 90 Points | The 2010 Coralillo Chardonnay is 40% fermented in stainless steel "bowls" and 60% French oak barrels, with a small amount of malolactic fermentation. The nose offers light resinous aromas with touches of lanolin and beeswax. The palate is medium-bodied with fresh grapefruit, lemon peel and mango that lead to a waxy-textured, well polished finish. This is another fine white wine from Matetic.' |
