Carpano Antica Formula is the benchmark Italian sweet vermouth. On the nose: rich vanilla extract, dried cherry, bitter orange peel, and warm spice. On the palate: full bodied vanilla, cocoa, dried fig, and a clean bitter finish from the gentian and wormwood. At 16.5% ABV the alcohol is present but not intrusive. It is noticeably richer and more complex than Martini Rosso and Cinzano, making it the preferred choice for high quality cocktails.
Cocchi Vermouth di Torino is the most recommended like for like substitute for Carpano Antica Formula. It shares the vanilla and dried fruit character of the Carpano style without the extreme richness. Punt e Mes is a valid alternative if a more bitter leaning Negroni is preferred.
