Aster Reserva 2021 75cl

The 2021 vintage presented a distinctly Mediterranean profile, marked by challenging weather conditions throughout the growing season. An irregular spring with scattered rainfall gave way to a dry, hot summer that created moderate water stress - promoting optimal ripening and flavor concentration. The resulting harvest, though smaller in quantity, produced wines of remarkable intensity, aromatic depth, and impressive aging potential.

Hand-harvested in 20kg crates from the Fuentecojo, La Cueva, and Otero Joven vineyards surrounding the Áster winery in Anguix (Burgos), planted on silt-loam soils at 780m altitude. Grapes were carefully selected using optical sorting tables. Fermentation and maceration took place over 15 days, followed by malolactic fermentation in French oak barrels with weekly bâtonnage for two months. Aged for 16 months in French oak (75% new, 25% second-fill) and racked three times by traditional methods before bottling in July 2023.
