Pillars of Creation 2026 continues an ambitious mission to redefine modern Irish whiskey through collaboration, innovation, and uncompromising flavour.
This distinctive release combines Single Pot Still and Single Malt Irish whiskey in a carefully balanced 60/40 blend, created from single casks with full Oloroso sherry cask influence. Spirit from Blackwater Distillery in County Waterford is blended with whiskey from Lough Gill Distillery in County Sligo before being married together for an additional eight weeks in a 500L Cream Sherry Butt, resulting in a whiskey layered with richness, depth, and remarkable complexity.
On the nose, dried cherries, cola sweets, dark fruits, polished oak, raisins, and soft honeyed nuttiness emerge beautifully from the Oloroso maturation. The palate opens with rich pot still spice before developing into notes of caramelised apple, dates, ginger, and earthy leather richness. Sweet and savoury elements work in harmony, while the mineral freshness of the Single Malt keeps the whiskey lifted, vibrant, and precise.
The finish is medium to long with lingering salted chocolate, drying tea leaf tannins, polished oak, and deep sherried character that remains long after the final sip.
