Making Techniques
The grapes are picked early in the morning to keep them at optimum temperature. A short, 4-hour maceration takes place before pressing. Fermentation also takes place at low temperatures. After alcoholic fermentation, the lees are stirred weekly for two months. No malolactic fermentation.

Generally yes, but not exclusively. White wine is made from grapes with colourless or pale skin, including Chardonnay, Sauvignon Blanc, and Riesling, fermented without skin contact. However, white wine can also be made from red or black grapes, as in Blanc de Noirs Champagne, which uses Pinot Noir and Pinot Meunier with early pressing to avoid skin colour extraction.
