Making Techniques | A sorting table is used to separate and select the best quality grapes, which are gently pressed. A pre fermentative maceration with skin lasting 3 days between 10-12ºC. Fermentation at 24ºC then takes place for a further 10 days . Malolactic fermentation takes place in stainless steel tanks, 6 months in American and French oak, natural light decantation and filtration before bottling. |
