This distinctive red wine comes from the hills of Valpolicella in Verona, Veneto, sourced from a single vineyard in località Mizzole, situated between 200 and 250 metres above sea level. Fully south-facing and rooted in calcareous soils, the vineyard is organically managed.
Made from 100% Corvina Veronese, the grapes are harvested late and selected by hand. Drying takes place naturally on the vine until early November, with careful monitoring to ensure the health and integrity of the fruit, resulting in a natural weight loss of approximately 25%.
Following gentle pressing of the dried grapes, fermentation and maceration are carried out under temperature control for 30 days. The wine is then aged entirely in large Slavonian oak tonneaux for 12 months, followed by further bottle ageing to allow the wine to fully evolve.
