Double distilled single malt that was initially matured in ex-bourbon casks before moving to three 500 litre ex-fino sherry butts in 2015. The whiskeys development was quite slow in the ex-fino casks, so in 2021 we recasked all three sherry butts into seven smaller casks. One of these was an ex-Tokaji Aszu cask from the Disznókő winery, Hungary – one of the world’s finest wines. We are very lucky to have sourced the Tokaji cask directly from the winery and it was super fresh which shows in the resultant whiskey. This is our first ever Tokaji cask and hopefully not our last as we are delighted with the results. Very different from any other Celtic Cask.
Tasting note by Matt
Nose: Peaches & apricots with hints of orange blossom, sweet oats & honeycomb.
Palate: Incredibly smooth, syrupy, slightly spicy with orgeat syrup, manuka honey & sun dried apricots.
Finish: Long & complex with citrus & honey.
