Celebrate 200 years of heritage with Old Comber 7 Year Old Single Pot Still, a limited release of just 2,016 bottles. Crafted from a mash bill of malted and unmalted barley, this whiskey is made entirely from barley grown, harvested, and malted on The Echlinville Distillery farm in County Down, honouring the spirit’s original 1825 origins.

Every step, from mashing and fermenting to distillation, maturation, and bottling, is completed on-site. Double distilled and matured in American Bourbon casks, then finished in premium Port and Sherry casks, it delivers a rich, layered profile that reflects both tradition and innovation. A true single estate Irish whiskey, crafted from County Down’s fertile farmland and made for the future.

Founded in 1825, Old Comber was once one of Ireland’s great whiskey houses, produced at Comber Distilleries in County Down, just ten miles from its new home at The Echlinville Distillery. When Comber Distilleries fell silent in 1953, Old Comber became one of Ireland’s ‘lost’ whiskeys, remembered for its quality, bold flavour, and its reputation as the home of double-distilled pot still whiskey.

After a 70–year absence, Echlinville revived Old Comber in 2021, reaffirming its commitment to restoring County Down’s historic whiskey legacy. Staying faithful to the spirit’s roots, Echlinville continues the brand’s tradition of Port and Sherry cask finishes while honouring its agricultural heritage. Old Comber’s story is deeply tied to local farming; the original distillery sourced barley from County Down farms and Ards Maltings, once one of Ireland’s largest maltings.

In 2023, Echlinville acquired Ards Maltings, reuniting this historic link under one distilling family and bringing Old Comber’s lineage full circle.

Aromas (without water) Bright and inviting, opening with the lively tartness of red currants and Bramley apples. Soft cinnamon warmth lends gentle spice, while a slight hazelnut note brings a subtle, nutty roundness. Layers of dried fruits develop with time, giving depth and mellow sweetness, before a final lift of apricot adds a delicate, sun-warmed fruitiness to the aroma.
Flavour A gentle spicey lift leads into an effervescent tingle across the palate, bright and lively. White pepper comes through clean and precise, adding definition without overwhelming. It settles into a dry, aromatic impression, invoking memories of wood shavings and staves in the distillery cooperage
Palate (without water) Smooth and creamy in texture, carrying a gentle, rounded hazelnut character throughout. Bright orange zest and subtle marmalade notes provide a lively citrus lift, balanced by the soft, mellow sweetness of poached pear. Caramel richness settles in the mid-palate, with a slight butterscotch warmth emerging toward the finish, giving a softly indulgent, lingering sweetness.

Single pot still uses a mash of both malted and unmalted barley, which is specifically and exclusively an Irish style. Both are distilled in copper pot stills, but the grain bill difference produces fundamentally different flavour profiles: single malt tends toward fruit and floral notes while single pot still delivers a characteristic spicy, creamy, grain complexity unique to the style.
Single pot still is an Irish whiskey style defined by the use of a mash bill containing both malted and unmalted barley, distilled in copper pot stills at a single distillery. The unmalted barley is the critical differentiator: it produces a characteristic spicy, oily, creamy texture and a green grain, orchard fruit, and nutmeg flavour complexity that no other whiskey style replicates. It is produced almost exclusively at Midleton Distillery. Redbreast, Green Spot, and Powers are the defining expressions.
Single pot still whiskey is an Irish whiskey style produced from a mash of both malted and unmalted barley, distilled in copper pot stills at a single distillery on the island of Ireland. It is a legally protected term under Irish Whiskey Technical File regulations. The style was the dominant form of Irish whiskey in the 19th century. The unmalted barley contributes a distinctive spicy, creamy, full bodied character that is unique to Ireland and cannot be replicated in any other whiskey producing country or region.
The name reflects two production characteristics: single, meaning produced at one distillery, and pot still, meaning distilled in a traditional copper pot still rather than a continuous column still. The term was officially codified in Irish Whiskey Technical File regulations in 2014 to replace the older informal terms pure pot still and Irish pot still, which had been used inconsistently. The pot still descriptor distinguishes the style from single malt, which is also pot still distilled but uses a different grain bill.
