Making Techniques Fermented at 30°C, with a long maceration period in 15,000L vats. Made from grapes grown within the enclosure of the castle and other nearby vineyards. Malolactic fermentation in new, fine-grained, medium-toasted French oak casks. Subsequent ageing with lees contact in the same oak for 12 months and 24 months bottle ageing.
