A very special sherry to introduce to you with this one. La Bota 108 Oloroso was bottled from a single cask, looked after by Chano Aragon is his bodega at Calle Olivo, downtown Chiclana. The cask that this wine was drawn from was marked "NO" by the bodega, meaning it was removed from the main solera, allowing the average age of the sherry to climb quickly and its character to intensify. This release is quite concentrated on the palate with notes of bitter nuts, lively acidity and a remarkably dry finish. Definitely one to savour.
