Making Techniques | Enormous care is taken at harvest time. Hand-harvesting with a selective sorting of grapes are proofs of quality. Destemming and crushing of all grapes.Fermentation of Grenache and Mourvèdre is carried out in different tanks. The fermentation lasts 3 to 5 weeks. Punching of the cap is done every 2 days, and pumping over every day. The malolactic fermentation takes place in “open-top” oak vats. Ageing continues in big oak tanks for a further 6 – 8 months for Grenache and in barrels for Mourvèdre. |

'From their oldest vines comes the 2009 Chateauneuf du Pape Vieilles Vignes, composed of 95% Grenache and the rest Mouvedre. This emerges from the high plateau of La Crau in the eastern part of the appelation, and the vines are 85+ years of age. Huge, sandy, underbrush notes, with pepper, black cherry jam and hints of strawberries and spice box are all present in this fragrant, full bodied wine, which is rich, savoury and irresistible already. It should drink well for at least a decade or more.' |
