Clams with Chorizo

Method:
Ingredients 
  • 2 tbsp olive oil 
  • 1 large onion, finely diced 
  • 2 cloves garlic, crushed and diced 
  • 1 bay leaf 
  • 50g butter, cubed 
  • 250ml Albariño 
  • 200g cooking chorizo, diced 
  • 500g fresh clams, cleaned 
  • Handful of fresh flat-leaf parsley, chopped 

Method 

1. Heat theolive oil in a large pan. Add the chorizo and fry lightly  until the oil begins to seep from the sausage. 
2. Add the onion and the bay leaf and fry until the onions have softened and have turned red. 
3. Add the wine and bring to the boil. 
4. Reduce the heat and cook for a further 3 - 5 minutes. 
5. Finally, add the clams and butter. Cook for a further five minutes 
or until the clams have opened. Discard any that don’t open. 
6. Fold the parsley into the clams and chorizo. Serve into four warm 
bowls, ideally with some crusty bread to mop up the lovely juices.
