200g Raw beef (finely chopped)
To Make Mayonnaise
110g Egg Yolks
100g Dijon Mustard
150g Vegetable Oil
80g Ketchup
30g Worcestershire
5 Drops of Tabasco
4g Salt
Method

Mix the eggs, mustard, ketchup, worcestershire & tabasco togeather. Slowly add the oil wile whisking as if making a mayonnaise. Season with salt.

Season the beef with the tartare mayonnaise to taste.

Serve with toast, diced shallots, capers & girkins.
