Making Techniques | After a slow yet even ripening period, the fruit was handpicked with great flavour and amazing natural acidity and low pH. The fruit was gently pressed and only the free run was fermented in stainless steel. Left on fine lees for 5 months to build texture and weight. This wines was then lightly fined, filtered and bottled. |
