Method:
Ingredients
 
For the Pastry
400g Butter
400g Sugar
5 Eggs
1kg Flour
50g Cocoa
 
For Filling:
1.9kg Chocolate (70%) – Melt
12 whole Eggs
400g Sugar
1.4lt Cream
1lt Milk
 
Pastry Method:
  • Mix all ingredients togeather to form a dough. Cover in cling wrap and place in fridge for 2hrs.
  • Butter & dust a tart tin with coco power. Roll out the pastry as thin as possible without breaking it. Place the pastry into the tart case making sure there are no holes. If there are use a small bit of leftover pastry to plug the hole.
  • Blind bake the tart case using some grease proof paper and some old coins or dried beans. Cook for 20 mins. When cooked let cool
 
Filling Method:
 
  • Mix the eggs & Sugar togeather, pour on the melted chocolate and whisk.
  • Warm the milk & cream and pour over the chocolate mixture. Pour into the now cooled tart case.
  • Carefully place into a preheated oven at 130°C for 1hr 15mins or it is firm to touch. Slice and serve warm.
