Bourbon
It was immigrants from Ireland, Scotland and Wales who were the first to start distilling in the US. They quickly discovered that local maize was an easy crop to distil moonshine from and set up small distilleries to supply thirsty settlers. Many of their names live on in the now famous brands such as Jack Daniels and Elijah Craig. These days there is a healthy mix of large super-distilleries and some great new craft or boutique operations. American whiskey can be made from a variety of grains for example Bourbon must be at least 51% corn and Rye whiskey at least 51% rye, whilst Corn whiskey must be at least 80% corn. Bourbon whiskey is unique in the world in that it can only ever be matured in new oak casks. This works out nicely for the Scots and Irish who are happy to buy them and reuse them for their own whiskey!
