Celtic Cask Tríocha a Seacht (37) Panama Rum
Our first foray into single cask rum. It was produced with continuous still distillation and then matured in a refill bourbon barrel. The first 10 years ageing was in a hot and steamy Panama followed by 6 years maturation in a cooler UK then cooler again Irish climate. We have bottled a portion of the cask and decanted the remainder into some smaller casks for finishing.

Taste | Warm, juicy, spicy and tannic with toasted exotic spices, cloves, cinnamon, dates, caramel toffee and flambeed bananas. |
Nose | Sticky toffee pudding, chocolate oranges, clove oil, dried bananas, tangerine & vanilla. |
Finish | Really good evolution in the mouth with a spicy start becoming woody then finishing up with lots of fruit. |
