American whiskey requires a grain mash bill, with bourbon mandating at least 51% corn, rye whiskey at least 51% rye, and Tennessee whiskey following bourbon rules with the additional Lincoln County Process charcoal filtration. Fermentation uses cultured yeast strains that significantly influence the flavour profile. New make spirit is distilled to no higher than 80% ABV and matured in new charred American white oak, the single most influential factor in the final flavour.
