Making Techniques The winemaking process started with cold maceration at 8 °C lasting 7 days. Then, selected yeasts were added and some processes such as rack and return and overpumping were carried out during fermentation. Once alcoholic fermentation was over, wine was devatted, separating the first wine obtained after it is separated from the skins and adding a fraction of press wine coming from pomace.
